Recipe: Choc Orange ‘Jaffa’ Mousse


      

This is a GREAT way to get a guilt free chocolate fix!

1 Cup raw cashews, soaked 6 hours
2 tablespoons coconut nectar
4 teaspoons coconut oil (measure solid then melt)
1 teaspoon vanilla powder
1 teaspon vanilla essence
½ cup almond milk
2 tablespoons raw cacao powder
zest of ½ orange
squeeze of orange juice

Method:
1. place everything except the coconut oil in a blender and blend till smooth
2.slowly add the coconut oil
3.pour into glasses or jars,  there should be enough for 4 people
4.place in fridge. This will be ready to eat within an hour but firms up nicely overnight.
5.just before serving , add a dollop of coconut yoghurt and grate some orange chocolate and orange zest on top.

  2. Hi Raelene, Coconut Nectar come froms the coconut tree, it's like a sap that comes from the blossom, a little like maple syrup . It's low GI and a more natural sweetener than Agave. you should find it at health food stores.

  3. Thanks for the reply. I've seen all sorts of coconut products at the health food store but never that. I will ask them next time I'm in there and see if it's something they can get hold of. Thanks so much....and nice looking recipe too :)
