Recipe: The Diggy Salad





Well, really, you can't seriously be calling this a recipe! It's a simple case of throwing together goodness from the garden and tossing it with other goodness. If you don't grow stuff, try it. Meanwhile, this is the perfect place to use all those goodies you just got from the farmers market....or wherever, as long as they're fresh and please god make them at least spray free! So really, here is a bowl of goodies including kale- tear the leaves off the stem carefully and then roll them up to brunoise them, cos leaves, spinach, beetroot leaves, carrots, tomatoes and avocado (sadly, not from the garden!) plus a sprinkling of pumpkin and sunflower seeds. On this occasion, I’ve used botanical cuisines Basil and Kale Pesto as a dressing because it’s raw, vegan and UNREAL. You could create your own super blend, we’ll have some wicked dressing recipes ready for you soon-  test kitchen is busy!
